One Global Capital is thrilled to announce a collaboration between Sydney-based renowned French restaurateur David Bitton and Infinity’s FX Restaurant and Bar, located at SKYE Suites Green Square. This partnership marks the beginning of an exciting culinary journey, combining the expertise of two creative innovators to deliver an exceptional, elevated dining experience.
The collaboration will feature signature dishes from both restaurants, showcasing the best of French and international cuisine. One of the standout dishes from Bitton’s repertoire is the chilli scramble egg, a delightful combination of scrambled eggs topped with ginger, garlic, spice, and a crunchy vegetable pickle, inspired by his wife’s grandmother’s recipe.
The partnership is set to begin on June 1st and will provide catering for room service and food operations at the SKYE Suites serviced hotel, which will be soon rebranded as One Global Resorts.
Mr Bitton shared his excitement about the collaboration:

That’s when I knew that partnering together to create a collaboration was the perfect way to share this energy with others. Our three-month association has resulted in a fantastic eclectic menu. This alliance aims to contribute to the local food scene in Sydney and engage with the community. “I have my own style. My wife is South African, Indian and French, with Moroccan and Turkish origins. We are creating dishes from these cultures. We’re always inspired by flavours and spices, and Australia has the best ingredients in the world,” Bitton said.
The new menu is the essential element of the launch. “I can say exclusively that the warm cheese pie will be perfect for winter. It’s quite moist, with a bit of lightness, it’s a comforting dish and we have three different French cheeses. Of course, you’ll also find our croque monsieur, our spicy Moroccan chicken sandwich, and the famous lobster roll with brioche bread,” Bitton added.
This collaboration implies a significant step towards strengthening the hospitality offering of One Global Capital, combining design, food and culture to create an exceptional and innovative experience for people visiting Sydney.
“We are looking to take the SKYE Suites hotel to the next level and are always looking to elevate the guest’s experience more along the lines of luxury international hotels. We will embark on developing a new hotel chain beginning with SKYE Suites Green Square, followed by our site at Macquarie Park,” Sunito added.
